Popcorn on the Cob (Secret Weapon: Brown Paper Bags)

For this recipe, you'll need two brown paper bags and one dried corn on the cob, a generous pinch of salt and two tablespoons of olive oil. Use a sharp knife to carefully cut off the husk of the corn. Place the dried corn cob inside the brown paper bag and fold it twice to close then put it inside the second paper bag. Fold it over again twice and microwave it for 1 minute and 45 seconds. Coat in oil and salt. So fun! 

Bacalaitos: Cod Fish Fritter (Secret Weapon: Mini Waffle Maker

For Rebeca's recipe, start by simmering the salted cod fish filet for about 15 minutes, taking a cup and a half of the boiling water out to use later in the batter. Then, remove the cod and break it up into large chunks. This will later be added to the batter.  

In a large bowl, mix together flour, baking powder, and black pepper. Then, add the reserved water and mix it well. Add sofrito and the cod fish pieces, add the mixture to your mini waffle maker and cook about 8-10 minutes. Yum! 

Apple Fritter (Secret Weapon: Mini Waffle Maker)  

And for a dessert fritter, place a chopped and peeled granny smith apple in a pot with butter and brown sugar, and let that come to a boil. Roll out the puff pastry sheet and cut out disks the same size as the mini waffle maker. Spray the mini waffle maker with non-stick spray and place a disk on the bottom and a scoop of the apple mixture on top. Then, brush egg wash around the edges and place the second disk over it, closing it up. Rebeca says you can enjoy this treat with ice cream or on its own. Sounds delish!
